Aladdin Campus Dining Enhances Student Dining Experiences
Pueblo, CO (Restaurant News Release) Aladdin Campus Dining opened the highly anticipated QDOBA, a leading fast-casual Mexican restaurant named by USA Today’s “Best Fast Casual Restaurant” for six years running, on the campus of Colorado State University Pueblo (CSU Pueblo) in Pueblo, CO, on April 2, 2025 during a ribbon cutting celebration!
With a proven record in increasing board plan participation and retail dining operations, Aladdin, a higher education dining specialist, was first selected as CSU Pueblo’s dining partner in 2017 to manage and enhance student culinary experiences. QDOBA is one of several exciting additions that are currently underway as Aladdin kicks off dining enhancements this spring to the University’s Student Center.
QDOBA offers students a variety of flavorful, Mexican-inspired foods including delicious chef-crafted signature dishes, freshly prepared burritos, bowls, tacos, quesadillas and always free hand-smashed guacamole and signature 3-cheese queso. Breakfast options and customizable meals are also offered to suit personal tastes and cravings!

QDOBA will enhance the student experience and have a direct impact on the economic development for the institution.”
The restaurant, managed by Aladdin, sits inside the newly renovated site which once housed the pizza restaurant Da Brix. This marks the first QDOBA location in Pueblo, bringing its popular Mexican cuisine to the local community. The restaurant will be open inside the Occhiato Student Center from 7:00 a.m. to 8:00 p.m. Monday through Sunday.
A VIP ribbon-cutting ceremony took place on April 2, 2025, at 10:30 a.m. Invited guests include Aladdin District Manager Mark Slater; Senior Director of Growth Joey Roberts; CSU Pueblo Interim President Rico Gunn; and CFO Garrison Ortiz. Following the ceremony, QDOBA opened to serve students and the campus community.
